Loaded Potato Cakes Recipe & Weekend Recap

Happy Monday everyone!

Before I started experimenting with cooking and baking, Randall used to make steaks for us almost every weekend on the stove. But this past Spring, when I took over in the kitchen around the time he started law exams, there wasn't much time, or room for steaks. And I've missed them! So after a long weekend of driving to and from Nashville, trips to estate sales and Lowes for the condo, and house/pet sitting (weekend recap below), I asked Randall to make his signature (and only ;) dish for a nice relaxing evening at home.

But I couldn't just sit there and let him do all the fun stuff, so I had to contribute with a side dish. And what goes better with steak than potatoes?
Loaded Potato Cakes!

These little suckers are packed with flavor. They taste exactly like a loaded baked potato but with better texture. I loved the crispy outside and fluffy interior.

What You'll Need:
 3 cups Mashed Potatoes (from scratch or instant)
1 & 1/2 cups Panko Bread Crumbs
2/3 cups Colby Jack Shredded Cheese
2 tbsp. Chopped Chives
1 Large Egg
Sour Cream (optional)
Bacon Bits (optional)

Step 1
 Combine mashed potatoes, panko bread crumbs, shredded cheese, chives, and egg into a large bowl. Stir until all ingredients are combined.

Step 2
Using your hands, roll and flatten balls into patties. 

Step 3
 Grease a cooking pan and turn stove on to medium-high heat. Place patties on pan and cook on both sides for 1-2 minutes, or until golden brown.

To top it off, add sour cream and bacon bits!

These cakes were perfect as a side dish, but would also make for a great lunch on their own!

Weekend Recap

This weekend was exhausting. On Friday Randall and I drove all the way out to Nashville to pick up our new washer/dryer, fire place cover, entertainment stand, and dining room rug that he purchased online.  (We decided to make the drive in order to save a little bit on shipping.) The place that sold us everything had a strict time schedule, closing their doors at 3pm sharp.  

Our plan was to leave at 9am to make it with plenty time to spare (and I was hoping to explore some shops not available in Memphis...). Due to Randall's internship (and partly because Randall NEVER leaves on time no matter how much I try to get us going) we didn't leave until almost 12! The entire way there, I couldn't stop thinking about getting there 15 minutes late and leaving without anything! Thankfully we made it literally RIGHT AT 3pm. If we had been 5 minutes later, we would have made the trip for nothing. We did, however, have to load everything ourselves in the 110 degree heat.... but for the price and quality of Randall's finds, it was well worth it!

When we got home that evening, we headed to a friend of Randall's so we could house/pet sit. All of the animals were sweet as could be, but I fell in love with the Sheltie named Ferocious.We both agreed that this will be our future dog!

The next day we hit up some estate sales and almost bought a beautiful round dining room table, but it was sold before we got there. It's probably all for the best because we wouldn't have anywhere to put it seeing how the papers for the condo have been delayed AGAIN. I'm ready to get started on this thing!

  1. Bud Light Lime! That's my favorite summer beer, my second favorite summer beverage after margaritas*, and the only time I will drink a beer with "lite" in the name.
    *We should get margaritas and get Katherine to come, too.
